Vegan Peanut Butter Birthday Cake Recipe
Hey my Sweet Vs. Its The Sweetest Vegan here and today, May 14 is my Birthday.
Yes I am one year older and it is time to celebrate.
The other day I saw fellow YouTube Next Chef, Average Betty do a cake, called Peanut Butter Birthday Cake by joy the Baker

So I said I have to make that for myself, that looks delicious. So that is what we are doing today, Peanut Butter Birthday Cake.
Here we go.
Start by sifting together all purpose flour, Ener G egg replacer,
baking soda, baking powder, and salt.
And you can find Ener G egg replacer at your local specialty Whole Foods store, or you can order it online.
Next, in separate bowl, use an electric hand mixer to blend together
peanut butter, Earth Balance buttery spread, or any vegan margarine you come across,
raw sugar, and brown sugar (packed, that is why is looks like that).
When it is all incorporated go ahead and mix in your applesauce
and once that in incorporated you can mix in that flour mixture we created.
And it will get pretty dry and crumbly.
Now we are going to make vegan buttermilk by adding white vinegar to almond milk.
Give it a good stir and it will curdle and look pretty weird.
Add the vegan buttermilk to your cake batter dough that is really dry
And blend that just until it forms a uniform consistency.
Divide the peanut butter cake batter between two cake rounds that have been lightly greased
or line with parchment paper. And bake at 350 degrees F for about 15 minutes,
then check on then, rotate them around to make sure they bake evenly,
and then bake them for 15 more minutes.
When they are done you should be able to stick a toothpick in the center and have it come out clean.
And I just went with the old cafeteria sheet cake style
because I was being a little lazy.
It is my birthday anyway and I put chocolate on the top. It was really delicious.
It was peanut butter-y enough and then there was the chocolate. It was a good moist texture.
