Hi, I'm Father Dominic the Bread Monk, author of "How to Be a Breadhead" and this is a Breadhead
Minute. One mark of a real breadhead is dinner rolls that are perfectly round and all evenly
sized. Don't be afraid to use a scale to weight out two and a half to three ounces. That makes
a good-sized roll. Now when I divided these I did not punch the dough down and knead it.
That's going to happen during in this process. Watch, this is so easy. Push hard, push softer,
speed up and make a cage with your hands and you get a nice smooth surface. Watch it again.
Push hard, push softer, speed up and make a cage with your hands. Perfectly round, smooth
buns. I'm Father Dominic, become a Breadhead, and you'll be blessed. This Breadhead Minute
made possible by the Home Baking Association, resources at homebaking.org.
