To make cucumber ribbons start with a whole
cucumber. Next, with your knife, go ahead
and cut off the ends. It's just a little bit
easier to work with. You want to go ahead
and discard these because these ends are inedible.
Now with your vegetable peeler, we're just
going to go down the length of the cucumber
as if you were peeling it. We're going to
go ahead and discard this piece because it
is mostly the skin which is a little bit bitter.
I'm going to go right behind that and make
another long piece. As you can see, it makes
really nice cucumber ribbons that can be used
in salads and all sorts of applications.
Once you get to the seeds you are going to
want to turn your cucumber a quarter a ways
through. You don't want your ribbons to have
the seeds in them because the seeds can also
be a little bit bitter. And that is how you
make cucumber ribbons.
