Hi, this is Ben Hardy with Expert Village. Now that we have a block of cheddar cheese
we are going to make small cubes for cooking with. We want about half inch by half inch
cubes. They can be a little bit bigger, a little bit smaller but not much. The goal
is to make them as small as possible so they melt and blend easily. The reason that we
are doing 2 different kind of cheese is the cube that would be used for the cooking process
and our shredded would be use on top as a garnish. We need a a little bit of effort
cause it is a thick cheese. Be patient, don't force your self and always keep your fingers
clear of the blade. Remember when you are doing the cube cheese we want about a 1 1/2
cups approximately of the cube cheese to match the amount of shredded cheddar that we have.
