Hi my name is Karl James owner of Creolesoul catering located in Round Rock, Texas and
on behalf of Expert Village I'm here to show you how to make hot links. Okay here we have
it our homemade hot links and we did them from scratch. We took our pork shoulder, we
cut that off the bone, then we trim that bottom part the skin and the fat off the bottom.
Then we cut it into bite size pieces or a least pieces that would fit into our grinder
our meat grinder and we did of coarse grind on that. We seasoned the meat with our link
seasonings that was heavy on the cumin and then we added our pepper blend that we use
to bring the heat to pepper heat out in the links. We use some dry red chilies as well
as some green Serrano peppers, we blended those together in the mixture and add that
to the meat after the fact. Then we played with the casing checked those casing make
sure they where okay soak them in water, threaded those on to our stuffers sausage stuffer,
and then stuffed our sausage. I'm not going to tell that this is a easy process it is
a tending long hard process to do especially if you are doing them by yourself. I mean
this is simply you should take on a weekend, have some friends over, have a sausage party
big sausage. If you have kids have them join you, your husband or wife either one of you,
you know spouses let them join you. And take your time invent, create, and make sausage
right here we have a hot link enjoy.
