Today we are going to make dulce de leche from scratch. Dulce de leche is a really thick
delicious caramel flavoured sauce that you can use on its own or in a number of other
recipes. To start with place your sugar and milk into a large saucepan.

description below this video. Then add you bicarb of soda.
And stir over the heat until the sugar is dissolved and it just starts bubbling. If
you leave it on high heat the milk will bubble right up and even if you have a large pan
it's going to boil over. So if you have a gas cooktop turn the heat
down at that point, if you are using electric move it to a new element and turn that one
to low-medium heat. Wash down the sides of the pan using a pastry
brush dipped in water. and then leave over the low heat, mine was on setting 3, so that
it's just simmering, you should see bubbles constantly. If it's not bubbling it's not
hot enough. This is going to take just over an hour for
it to turn into dulce de leche. Every 15 minutes during the cooking process use a fine metal
sieve to remove any build up of froth and then wash down the sides of the pan again
using the pastry brush. And then leave it alone to bubble away
After an hour it looks like this. It still looks thin but darkened in colour, remove
the froth again and then check it every few minutes because suddenly it will turn from
the thin liquid into this thick bubbling caramel. Immediately pour it through a sieve so that
if any little bits of caramel have caught on the bottom of the pan you don't have them
in your sauce. And then leave it in a bowl for a few hours to cool completely. And it
