Today we will prepare Zucchini Sabzi.
Zuchini Sabzi can be prepared in many ways.
Tomato Zucchini sabzi can be made or tomato zucchini curry can be made.
It can also be prepared with green grams.
But today we will make simple zucchini sabzi which is really tasty.
So lets make zucchini sabzi today.
For that we will have 3 medium sized zucchini's (500 gms).
2 tblsp refined oil.
2-3 tblsp finely chopped green coriander leaves.
2 green chillies finely chopped.
1 tsp ginger paste or 1 inch ginger grated.
1/2 tsp cumin
A pinch of asafoetida.
2 pinch of red chilly powder.
1/4 tsp of dried mango powder.
1/4 tsp of turmeric powder.
1/4 tsp black pepper powder.
Here we have taken 10-12 black peppers and ground it coarsely.
1 tsp coriander powder.
3/4 tsp salt or salt to taste.
For preparing zucchini sabzi we will first slice the zucchini.
Although zucchini looks like ridged gourd and tastes almost the same.
Its taste also resembles pumpkin.
Now slice the zucchini's.
Before that remove the wands of zucchini from both the sides.
We have already washed and dried the zucchinis
Slice it from the middle.
And then again slice them into pieces of 1-2 inches.
If the slices are too big then you can slice it into two from the middle.
Now the zucchinis are ready for the preparation.
Turn on the flame. Pour oil into the frying pan.
After the oil gets heated up we can pour cumin seeds, asafoetida powder.
When the cumin seeds gets sauteed you can add turmeric powder.
ginger paste, green chillies, coriander powder. Saute the mixture for few minutes.
Now add the sliced zucchini pieces, salt, red chilly powder, black pepper powder.
Fry for two minutes and mix well the spices with zucchini.
Make sure that there is a coating of spices over the zucchini.
Cover with a lid and let it cook for 3-4 minutes in low flame.
Stir the mix a little bit.
Zucchini is high in water content. So we do not have to add water.
You can see that there is sufficient water in the pan and stir them well.
So that the spices and zucchini mixes well with each other.
Now cover the pan again with a lid and cook for 4-5 minutes.
Let's check the sabzi.
Occasionally checking the sabzi and stirring them is very important.
We need to cook the sabzi for some more time.
After mixing them again cover the pan with a lid.
And let it cook for 4-5 minutes.
Now again check the sabzi.
Mix the sabzi again. Slightly press the zucchini with ladle.
As zucchini is really soft they can be prepared easily.
Since we are preparing it in low flame, zucchini will be really tasty then.
On pressing zucchini with the ladle we can feel its tenderness.
And the sabzi is ready.
Now we will cook the sabzi for one minute in high flame without covering it.
Add dried mango powder and mix it. Add coriander leaves.
The sabzi is finally ready. Now you can turn off the flame.
The sabzi is ready within 20 minutes.
We had stirred the sabzi every 5 minutes after opening the lid.
We checked it continuosly and then cooked them again.
Tasty zucchini sabzi is ready.
You can serve them with roti, parantha or rice.
It can serve around 4-5 people and can be used as a side dish.
