I'm not sure you can tell a good restaurant
from its looks.
Paris is an old city
with some very authentic spots,
which may not be much to look at
but where you'll get authentic cuisine
of good quality served by professionals.
How can you tell a good restaurant?
Often by listening
to word of mouth
or through professional guide books.
In France,
we have the Michelin Guide for gastronomic restaurants.
But it also has brasseries,
bistros, theme restaurants,
which are sometimes listed,
not with stars,
but just being in certain guides guarantees a level of quality.
Paris
has tens of thousands of restaurants,
some of them gastronomic, some less so.
But,
as Paul Bocuse said, there's only one sort of cuisine: the good sort!
