Hello and welcome to Archana's Rasoi! Today, we're making potato curry.
When you have any rice dish, like khichadi or masala rice, this potato gravy makes a full meal!

This will potato curry serves 4 people. Let's go over the ingredients...
3 potatoes chopped into chunks, each potato has been chopped into 8 pieces. 2 onions, finely chopped, salt to taste...
1 tsp mixed masala, 1 tsp, ginger-garlic-green chilli paste also, 1/4 tsp turmeric powder, 1/2 tsp mustard seeds, 1/4 tsp asafoetida, oil and water to cook.
Let's get started! First, we heat the oil.
Heat 2 tbsp oil. Add 1/4 tsp asafoetida and 1/4 tsp turmeric powder and 1/2 tsp mustard seeds.
Next, add 1 tsp ginger-garlic-green chilli paste, 1 tsp mixed masala and 2-3 finely chopped onions. Mix well and stir fry. Add salt to taste.
If you like, add some coriander to the seasoning, keep some for the garnish.
Some people call this 'Potato Bhujana', where pounded garlic is the main ingredient in the seasoning
Stir fry the onions, leaving them a little under-cooked. The onion needs to be seen in the gravy.
Let's now add the potatoes! Each potato has been cut in 8 pieces. Add all the potatoes now.
We now add 1 cup water. Let the water come to a boil. To cook all the potatoes properly, we'll cover the pan with a lid.
Let's check if the curry is cooked!
The potatoes have cooked properly. Let's now turn off the flame.
Our potato curry is now ready! Try this with a yellow lentil khichadi (rice dish)... it's a delicious combination!
