"Adobo" - a popular dish in Philippine cuisine that involves meat, seafood, or vegetables marinated in a sauce of vinegar, soy sauce, and garlic, browned in oil, and simmered in the marinade. :)

Vegemite can be a substitute for soysauce.

I'll put in 1 or 2 cloves of garlic.
Then onions, next is bay leaves/laurel, and lots of pepper.
Then 1 kilogram of pork belly.
I'll mix in everything just to get the pepper and the garlic distributed.
1/4 cup water of soy sauce
1/3 cup water of vinegar
Use your hand!! HAHAHA!!
Do I really need to use my hand? Haha!
And we're back, this is really good, SUPER SUPER salty!
And i'm gonna put in 1 tablespoon of the Vegemite into this dish.
Lastly, a cup of water. Then mix the Vegemite.
I'm gonna give this a stir for 10 minutes until it boils.
The sauce has already boiled and softened the Vegemite so it's easy to stir.
It's really hard to speak/explain wines in Filipino language.
This is a world first that someone has cooked "Vegemite Adobo".
I lessened the vinegar so the acidity will not be too high to pair with the wine.
And of course, I have my own special ingredient for this Adobo. The "Vegemite" from Australia.
The taste is really strong so I suggest you really need the rice. Maybe because it's not the "usual" Adobo.
The difference is that it tastes a little more earthy. I don't know what's the Filipino term for "earthy" flavor compared to the original soy based Adobo.
BUT! It still does taste good!! A very salty style, the pepper, garlic, onions... you can all taste as well.
It adds a little bit more fruit and sweetness in your mouth together with the "salty" flavors of the Vegemite Adobo.
I should do this in "slow motion" Hahaha!
