Hey everyone and welcome to Nicko's kitchen.
Today we've got the perfect snack to take away on a camping trip or a fishing trip
or if you go hunting, what ever you want to do. I've got the perfect snack to take with you.
Scotch eggs.

Alrighty guys, scotch eggs. I love scotch eggs, they are my favorite, well one of my favorite snacks
to take on you know, a camping trip or when a few of us go fishing or you know whatever, there just perfect.
Or I mean you can make em for a kids party or dinner party or whatever you want they're fantastic.
Now they had gone a bit out of fashion unfortunately because they're now perceived
as a unhealthy fast food, because a few of the big food corporations started making them
and as soon as that happens you know the nutrition factor goes out the door so.
Unfortunately they're perceived as a bit of sort of a unhealthy you know not a very appealing meal.
So I'm gonna try and change your thoughts. Now this is what you're going to need.
You're gonna need some pork sausage OK just some ground pork sausage
again I asked my butcher to do a 80/20 split for me, 80% pork 20% fat, again I don't want these to dry out.
We've got some fresh parsley, some eggs, some chopped onion, we've got some cinnamon and nutmeg
Ok now I know your probably thinking now why would you put that in a savory dish?
I just feel that these two spices they just lift the pork, OK they just really give it a nice flavor.
We've got some plain flour,and we've also got some just plain dried breadcrumbs
I normally use the whole grain ones, but for today, I'm just using the plain breadcrumbs.
Now, basically what we're gonna do is we're gonna hard boil our eggs
shell them, and then we're gonna put our sausage meat around the egg
we're gonna mix it around the egg, then we're gonna coat it in the breadcrumbs
And then we're going to ah cook them in the oven. Now, you can deep fry them
I'm not gonna do that today I'm gonna do it in the oven, there just as nice.
And that's what we're gonna do. So go and hard boil your eggs.
Now I'm not gonna show you how to do that but I'm gonna tell you.
Basically hard boiling an egg, you wanna put the eggs in a pan of water
just room temperature, leave them standing there for about 5 minutes
Let them get used to the temperature around because you don't want to put
a cold egg into hot water, because you're just going to ruin the egg.
So, what you wanna do, go and stand them in room temperature tap water for about 5 minutes.
Put it on the heat and slowly bring it to the boil, then when its at a boil
leave it at a boil for about 8-10 minutes, OK, take it off the heat, leave them for about 5 minutes
and then under cold tap water, shell them, OK, its dead easy. Right so,
we're gonna boil our egg then we're gonna work on our sausage mince here and ah we'll get going.
OK so we've chopped up our parsley. I'm just gonna put in our sausage meat
and our chopped Onion,
and our spices, some nutmeg here, OK just a sprinkle of both
for all the ingredients and the exact measurements, they are on the side of the page or on the website
Just got some cinnamon there
OK, and we just wanna work this through
OK guys we're gonna add our hard boiled egg here now.
What I wanna do, is just roll this really gently in some flour
OK, just shake off the excess, and I'll just leave that there
Now what I wanna do is grab our sausage and in the palm of your hand
just press into it like that, OK so your almost forming the shape that's gonna go around the egg
Ok and then I want you to grab your egg just put it inside it and very carefully
wrap the sausage meat around the egg.
OK, just like that.
OK, until we've got this ball of just mince there the egg is in the middle OK.
Then what we wanna do, I'll just move this to one side.
Ok, we just got some beaten egg here, and our bread crumbs
So I just wanna roll this, again very carefully, just in our egg mixture.
And what this does, it just keeps the breadcrumbs sticking
So I just roll it around, pick it up, and I wanna roll that in our bread crumbs.
Now, this goes into a pretty hot oven for about 15-20 minutes at about 220 degrees
OK, and we're gonna put it on some baking paper, OK, and we'll do a couple of these
You can do as many as you like I mean its really up to you.
And ahh 15-20 minutes just until there cooked, and we'll bring um out and I'll show you what they look like.
OK, so we've pulled out our scotch eggs, there looking fantastic, I've already had half
because they are just so so yummy, so I'm just gonna cut through this one.
Really slowly OK.
And look at that! OK, just look at that!
That is to die for, they smell fantastic. You can just get a hint of the cinnamon and the nutmeg
I'm gonna go and enjoy these.
And there you have it guys, scotch eggs, they are beautiful.
Now like I said, you can deep fry them if you like, but I do like the crispiness that the oven gives it on the outside
It's got that roasted sort of flavor to it as well which is just fantastic.
It's got the egg in the middle, its got that cinnamon and nutmeg through it, the onion
the nutmeg as well. They are fantastic! Give them a go.
