Hi, I'm Shefaly from Shef's Kitchen. I'm a part time Indian cooking instructor and a full time mother of two.
Today, I'd like to proceed with a recipe that is very
simple. It's a baked tofu in a quick marinade. What you do is you start out
By making your marinade. And here I'm going to peel some garlic.
I don't want to mash the garlic too much
because I don't want to crush my garlic, because I'm going to be grating this garlic.
And some ginger right here. I'm just going to take a little piece.
This is fresh ginger. Now we're going to grate this. I'm using something that's specially called
a ginger grater, but any grater will be fine.
Right on top of that is my garlic.
I want to use just equal amounts of the ginger and the garlic.
That's the start of my marinade. And a little bit
of honey. A little bit of
light soy sauce.
And some Japanese rice wine, also known as Mirin. And little bit of water.
And some lovely peanut oil, right in here.
You can use toasted sesame oil, too.
And you just give this a little whisk. Now it looks like
not much marinade, but you will see what magically happens to this tofu.
Now you set this aside.
Now we're going to start to prepare our tofu.
Here's this extra firm block. The way I would cut these is you want to cube it
as evenly as possible. You can make them big, small, whatever you'd like to do.
And then just pop that in here.
Now the key to this dish is you want a single layer of the tofu.
You don't want to crowd the tofu because if you do, you might steam it
a little bit in the oven. And you really want that sauce to get absorbed.
That's kind of how you want to do it. And then we'll give this marinade
another quick whisk. And when I say marinade, you don't really have
to let it sit at all.
It can go right into the oven as-is. Just rotate it around a little bit
in the sauce, so that all the sides are coated.
And then it goes in an oven at 400 degrees for about a total of 30 minutes.
Halfway through, you want to rotate the cubes of tofu,
so that the other side browns. So I've taken
that tofu out of the oven. It baked for about 30 minutes. And here we have
the marinade that's totally soaked into the tofu. You can see it's colored beautifully.
