My colleague Micah brought this salsa to work last year for a potluck and I loved it! It's
nothing like the store bought salsa. And I think it looks really pretty too.
Quarter 1 pint of grape tomatoes. I think you could use cherry tomatoes, but we're using
grape tomatoes here. Add in ⅓ cup of minced red onion, 2 tablespoons of minced jalapeno
pepper, or more if you like more heat. Pour in 2 tablespoons of rice wine vinegar or lime
juice. Add 2 tablespoons of agave nectar and ¼ teaspoon each of salt and pepper. Mix it
well and you're done. This is another one of those recipes that
you can adapt to your taste. Add cilantro, black beans, mango - whatever you like. If
