Hi, this is Rich Buccola here in New York City and today on behalf of Expert Village,
I'm going to show you how to make quick fix focaccia wedges. Okay, we're going to take
this beautiful red pepper. We're going to chop it up, de-seed it and we're going to
also be ready then to saute all of our veggies. Alright the first thing I'm going to do is
just cut off the top of our pepper and I'm going to cut it in half. We're going to de-seed
it and to de-seed it, I like to take my paring knife and just give it a little cut all the
way around, removing all of this. We're going to cut out anything that's white in here and
remove our seeds. Just give it a good slice one way. Be careful you don't cut yourself.
Be careful when you cut towards yourself, too. You should always cut away. And I'm just
going to take it with my hands and just pull that out. Like so. You're just going to try
to remove the seeds like so with your fingers. And even something like this, you maybe want
to remove some of that. Just you know till you get to the flesh of the pepper where it's
red. You don't see that white. Alright, once you have them cleaned out and de-seeded what
I do is I just try to keep them this length and just nice slivers or slices going across
the pepper. Just make nice even slices. Going to go about a sixteenth, quarter of an inch
in slices. When you finish slicing your pepper, put that aside and we'll meet you over next
to do my favorite part, sauteing. We'll get these onions nice and caramelized. We'll cook
down this pepper. And one other thing though. We're going to take a few of the peppers.
Maybe just two or three slices. Just going to leave them on the side, raw for garnishing.
