We're very lucky here in Ontario to have some of the best icewine in the world; some people
would say the best icewine in the world. I'm one of them. It's going to be very sweet.
I've heard many times that: "uh, it's too sweet." Mm? I don't think so. Let it sit in
your mouth for a good seven seconds. If you just take the icewine in your glass, (and)
have a good sip and you just swallow, it's going to be extremely sweet and you won't
get any of the acidity and the nuances that will make you think: "Wow! That's the best
icewine I've ever had." So let's make sure we try this together. When you open your bottle
of icewine , made sure it's around minus four degrees Celsius; from the fridge -- fantastic.
Then, you let it warm up in your glass. It can be room temperature: it'll be just as
good, if not even more aromatic and creamy. First, we take a look at it: look at this
golden colour. We can definitely see how the legs stay on, and it's quite sweet. We can
anticipate the flavours to be quite, quite impressive. Now, when you look at the red
icewines, you get more of that raspberry, strawberry, rhubarb. Let's put our nose into
that. So: when we smell icewine or any type of wine, actually, we just don't smell from
afar. You've got to make sure to put your nose right into the glass. You get all the
nuances and the little secrets that the winemaker wanted you to get. This icewine has been oak
aged; so it will have a bit more of that caramel, that butterscotch deliciousness. Still, the
apricot and the peach come out quite strong. Now, again, don't just drink it: taste it.
Wow. The
acidity comes out; you can feel it tingling. Have this as an aperitif or as a dessert wine.
Very sweet, but the acidity; what a perfect balance with the alcohol. Stunning icewine.
I would have that with a peach cobbler... Try it on vanilla ice cream. Make sure you
keep enough for your glass of wine; just a little drizzle on your ice cream, and enjoy.
