This guacamole is simple and easy and can be adapted to your taste.
Pour the juice of 1 lemon and 1 lime into a bowl. Scoop out the flesh of 3 avocados
and add them to the bowl. Mash the avocados. And I'm using a potato masher because I like
my guacamole pretty smooth but you could use a fork and mash it to your liking. You can
leave lots of chunks if you want to. Mix in ¼ cup chopped cilantro, ¼ cup of minced
red onion, 1 minced jalepeno pepper and ¾ teaspoon salt.
This is one of those dishes that get's better as it sits and the flavors get to meld.
Cover it so that the plastic wrap touches the guacamole. And this keeps the air out
and keeps it from turning brown. Refrigerate it for at least an hour before
you serve it. You can add garlic, tomatoes, more onion,
more cilantro, more jalepeno...whatever you like. Make it your own and tell me how you
