Hi Everyone. Welcome to Nicko's Kitchen.
Today, we're going to be making something pretty interesting.
We're going to be making Big Macs.
Yup, Big Macs.
Or, as some of the, my friends and family have called them,
Big Nicks.
But, come on over.
I'm going to show you some of the ingredients.
And I'm going to prove to you that a Big Mac
can be good for you and you can do it at home as well.
Alrighty folks, Big Macs.
I'm going to show you just how easy they can be at home
and I'm going to show you that they can be good for you
because you're going to know exactly what you're putting into it.
OK so, let's go through the ingredients.
We've got about 200 grams of minced beef
or some minced sausage meat; whatever you want to call it.
It's about an 80/20 split; 80% beef, 20% fat.
You can always ask your butcher to do that for you.
We've got some chopped up onion here.
We've got some shredded lettuce.
And some cracked pepper and some salt.
Now, I'm just going to put these things to one side.
And I'm going to go through the rest.
We're going to use some castor sugar.
Now, don't panic; we're not going to use all that.
That's just from my stores.
We're only going to use about a teaspoon of sugar.
We've got some pickled cucumbers there.
That's going to go on.
We've got some sweet mustard pickles.
Some mayonnaise;
you can use light mayonnaise if you want to.
I'm using the full one today.
We're going to use some light, full cheddar cheese.
You can use the full one if you want to.
I'm just using this package here.
You can use any sort of cheese you want to as long as it's sliced.
And of course, the sesame seed bun.
Now, the trick is, now,
they don't sell the three tier sesame seed buns in the stores,
so I'm going to show you a little trick on how to make that into a three tier.
But, first thing's first, the burgers.
Gonna bring across our tray.
Now, you'll notice that I've got some baking paper here;
some non-stick baking paper I've trayed.
We're going to make our burgers.
Now, when a lot of people make burgers, they're about that thick.
And, I don't make burgers sort of that thick
because I try to make, I want everything in balance.
I want everything just to be in balance.
So what we're going to do is
we're going to roll these up in a ball.
OK.
And we're going to put them on our baking paper.
Just roll it up in a ball like that.
Put it on your baking paper.
Now, these are going to be our two patties.
OK.
So, now what I want you to do, just pat them out.
Fold that down.
What we want to do is get another sheet of baking paper
and just place it over the top like that.
OK, now what I want you to do is go
and put that in your freezer for about ten minutes.
They'll harden up into meat patties
and we'll be able to grill them from there.
OK, the special sauce.
You're going to need a little bowl.
Alright, now first thing's first,
we're going to need some mayonnaise.
I'm just going to go and get a spoon.
Now, I'm just making one,
but I mean the recipe I've got all the details
on the side of the site for the exact measurements.
I'm just going to put in here enough.
About three tablespoons.
OK.
Then we're going to add some sweet mustard pickles,
just there.
OK.
So, we're going to need about,
oh, three or four teaspoons of this.
I'll put in four.
OK.
You're going to need about a teaspoon of sugar.
I'm just going to pinch it and put it in.
Three pinches, that's about a teaspoon.
OK.
And I'm also going to add some white vinegar.
Now, you only want about a teaspoon, if that.
Just put it in there.
And give it a mix.
You can see there the color of the sauce is changing.
OK.
And we're also going to add some onion.
OK.
About three tablespoons.
OK.
Add that up.
Mix that through.
And, Ladies and Gentlemen, that is your Big Mac sauce.
Now, I'm going to show you how to turn this
into a three tier bun; a three section bun.
OK, now what we want to do is
we want to cut about there and there
so we do have a middle section.
OK, now I do this from the bottom is work the blade.
Just work with the blade, don't force it
just let the knife do its job.
We've got one so we'll move that section over.
Now we'll do the middle part as well.
Just work the blade through nice and slow; no rush.
And voilà!
OK, just place them in there like that.
Don't forget they will shrink a little.
And to that, we want to add just a sprinkling of cracked pepper.
A little bit of rock salt.
You can use normal sort of salt I think that rock salt's just got a fantastic flavor.
What I've just done as well is
I'm toasting all the three buns.
It's time to assemble now.
I'm going to show you what to do.
We get our Big Mac sauce and just put that on the top.
Just spread that around.
OK.
Then we want just a sprinkle of onion on there.
Just make sure it's everywhere.
Just a little bit more.
And then we want some lettuce.
Just opening a pickle jar.
We want some lettuce there like that.
Then we want a couple of pickles.
Put three on, don't put the ususal two.
So we've got three pickles there.
And then, we're going to put on our first meat patty there.
Then we're going to get the middle section.
Just put that on the top and squeeze it down.
Put some more sauce on there.
Again, just spread that right around.
Some more onion just on the top.
OK.
You want some lettuce.
Some more lettuce on the top as well.
Our second beef patty.
And of course, our slice of cheese.
And then, the top bun.
OK guys, I hope you enjoyed the Big Mac
