A well stocked Middle East kitchen or a kitchen in which your going to cook
Sephardic foods
or middle eastern foods would be stocked with
at least three items. One is Semolina.
You'll find Semolina is used often in Italian foods because pasta is made
with Semolina.
Greek foods are made with Semolina.
But also
Syrian foods,
Turkish foods,
Semolina is used usually in a dough.
It's used
in a dough that for example for Sambusak or for various pastries that you would make
In Middle East cooking.
The second thing that you'll find often is Bulghur.
Bulghur is a wheat
Bulghur wheat comes in three different grains of
grinding, of fineness. This is a fine ground
Bulghur wheat,
but there is also medium ground and there's rough ground
and depending on the recipe. The recipe will tell you
how well ground the Bulghur should be and you should buy the Bulghur
accordingly.
I generally have
fine ground in my house just about all the time.
And finally sesame seeds.
Sesame seeds
provide flavor
in so many different ways they are a decorative feature on Hor d'euvres like
if you're making
uh... muirrat
which is filo stuffed with cheese
but it's also
sesame seeds can also be used when you are coating chicken
if you're going to cook chicken with any kind of a bread
coating
or with any kind of topping
you can mix the sesame seeds in with the topping and it will add a very very
interesting flavor to it, a flavor that you don't want to miss.
