While we are waiting for the vegetable stock to boil, we are going to go and turn our front
burner up to 8, and then we are going to add a tablespoon of oil. And while that is heating
up we are going to cut half of an onion and we are going to cut that in half and then
we can very easily remove the outside layer of skin. What we want to do is just thinly
cut the onion until we have these little half rings and we will want to do that with both
sides and we want these onions to have a nice dark caramel color because we are going to
caramelize them and we are going to add them before we add anything else so that they actually
cook the longest. And then while we are waiting for them to cook up we are going to cut two
cloves of garlic so we will look for the little dark end on each clove and remove them and
then we'll go ahead and chop our garlic.
