Hey, Cookaholics, Chef Kendra here and since a lot of us in the US is getting hit by that
Polar Vortex thing freezing up the Country this my friends is the perfect time to make
some comforting soup. We're making clam chowder.
So let's do what we do and head into the kitchen and make it happen.
We have our ingredients ready to go, half and half, clam juice, clams, water, potatoes,
bacon, butter, red wine vinegar, onions, flour, salt, pepper, celery and parsley.
So we're going to peel our potatoes. We're going to put them in water some they don't
brown up on us.
The next thing we're going to do is dice the potatoes. Then we're going to chop our onion
and set that aside. We're going to do the same with our celery, get that chopped and
set aside.
And the last thing we're going to chop is our parsley. Make sure you rinse it first.
Drain your clams and safe the juice. Check clams for shells, cause shells isn't on the
menu.
OK, get a large pot under medium heat and add the water and bottle of clam juice. Now
add in the diced potatoes.
The celery goes in. Toss in the onion. Give it a little stir just like so. Now we're going
to toss in the reserved clam juice from the cans. Bring to boil, put the lid on, turn
heat to low and cook for 12 minutes.
Melt the butter in a large pan over medium heat, add the flour and stir. Yes, we're making
a Roux .
We're going to stir this for about 5 minutes. Make sure your pan is big enough, I eff up
and had to switch pans cause stuff just wouldn't fit and that's not right.
Now we're going to add the cream and whisk. We're going to bring this to a boil whisking
occasionally.
Add the potatoes and all its liquid to the thickened cream mixture. Add the red wine
vinegar, parsley, salt and pepper. Warm through and check for seasoning.
Garnish with crumbled bacon and some parsley if you're down.
OK, we're going to give it a taste. Um..so good, this soup is really good, really warm.
It's comforting is like a hug in a bowl. It's perfect for this cold weather. I hope you
