Hey there! This is Lacey Baier with A Sweet Pea Chef, and today we're gonna make the best
chicken tacos ever. These tacos are super easy and full of flavor. So, let's get started.
Here are the ingredients you're gonna need.
To make these chicken tacos, we need to first start cooking the chicken thighs. So, heat
a tablespoon of olive oil over medium-high heat in a large skillet and then let that
get hot. Season the chicken with the salt and pepper and place into the hot oil. We're
gonna cook for about four to six minutes per side or until it's well browned and cooked
through.
While the chicken's cooking, we're gonna make two, tasty sauces. A quick pico de gallo salsa
and a creamy chipotle lime sauce. For the pico de gallo, combine the diced tomatoes,
diced red onion, finely chopped jalapeño, lime juice, chopped cilantro, salt, pepper,
and cumin in a small mixing bowl and stir well. To let the flavors meld, we're gonna
pop the salsa in the fridge. To make the chipotle lime sauce in another small bowl, we're gonna
combine the greek yogurt, Adobo sauce, lime juice, salt and almond milk, and then we're
gonna stir that together until it's smooth.
Once the chicken is cooked, remove it from the pan, set it on a cutting board, and we're
gonna dice it into small, bite-sized piece. Then, we're gonna return that chicken back
to the pan. Our taco seasoning blend contains ground cumin, paprika, chili powder, powdered
garlic, and granulated onion. And, we're gonna use this to flavor the chicken and the rest
can be stored for later. Keep the chicken back on medium-high heat and then add a tablespoon
of that taco seasoning. We're gonna cook for about a minute or two, stirring it to coat
well.
To assemble these delicious chicken tacos, grab a corn tortilla, fill it with the seasoned,
diced chicken, and then top it with that pico de gallo salsa, followed by a light drizzle
of that creamy, chipotle lime sauce. Alright, so there you have it. Super flavorful, best
ever chicken tacos for you to make for dinner tonight.
