One of the best things about Missouri in early summer is the availability of wild raspberries.
They make great jelly and pies.
But today, we're going to show you how to make a moist,
delicious dessert called wild raspberry gateau.
First...preheat the oven to 350 degrees.
Then lightly butter or oil a 9-inch springform pan...
dust with flour and set aside.
Stir together flour, baking powder and salt
and set that aside.
In a large bowl, beat the butter and sugar until fluffy and light.
Add eggs, one at a time, and beat until blended.
Gradually add the flour mixture and beat until well mixed.
Pour the batter into the springform pan and spread evenly.
In a bowl, lightly mix the raspberries with lemon zest,
about a teaspoon of flour, and about a tablespoon of sugar.
Spoon the berry mixture over the batter and bake about 1 hour.
Cool on a wire rack, then remove from the pan.
Sprinkle with confectioner's sugar and serve.
