Hello, everyone.
Today, I'm going to make Agedashi-tofu.
Tofu is low-calorie, and has good protein. And good for your health.
And very easy to make. I do hope that you make it.
Ingredients are here;
Tofu, Katakuriko starch, commercially available concentrated Tuyu stock
Soy sauce, Mirin (sweet cooking sake), Sake and Water.
Let's get started.
First, Drain the tofu.
Place a paper towel on a tray, and put the tofu on it.
And wrap the block of tofu inside, like this.
Place a plate as a weight on it, and leave for about 10 minutes.
While waiting, make Tuyu sauce.
Add the Tuyu sauce ingredients to a pot.
Today, I'll use commercially available concentrated Tuyu stock.
The concentrated Tuyu stock.
The soy sauce.
The Mirin (sweet cooking sake).
The sake (Japanese rice wine).
The water.
Heat over high heat.
Heat the liquid until the boiling.
Look, the liquid has boiling, boil down at high heat for another 1 minute.
1 minute has passed.
Turn off the heat.
And then, the Tuyu sauce is done.
10 minute has passed.
The tofu has eliminated excess moisture, like this.
Next, coat the Katakuriko starch and deep-fry in oil.
Coat thinly, like this.
Coat it evenly.
Add in oil preheated to 340'F.
Deep-fry until the tofu turns light brown.
It has just turned light brown, like this.
Take out of the pan and drain on a tray.
Next, arrange on a serving dish.
Pour the Tuyu sauce to the dish.
Set the tofu.
Arrange toppings that you like.
Today, I will put Negi, Momiji-oroshi and Yuzu.
Momiji-oroshi (Grated Daikon radish with red pepper),
Negi (Japanese spring onion),
Yuzu (Japanese lemon fruit).
And then, it's ready to be served.
