The 9th of February: special day for us
and for more than one billion people
Today the celebrations for the Chinese's New Year begin
and what a better way to celebrate the Year of the Snake
than having dinner in a traditional restaurant
We wish you Xin Nian Kwai Le (新年快樂) - Happy New Year
and enjoy the B'm'B dinner at the "Sole Rosso" restaurant
Here we go: the B'm'B, who take you to the best street food joints in Italy
And our friend Baisong, the owner of the "Sole Rosso" restaurant
and today he'll be cooking lāmiàn (拉麵 )
the word lā (拉) means "pull" and the word miàn (麵 ) means noodle
i.e. pulled noodles
This dish is very famous throughout China, many variants exist
and today we'll be cooking it the Wengzhou fashion
let's see how to prepare Lamian
Start preparing a dough with water and flour
Let it rest for 5 minutes under a cloth
Cut the dough into strips
which Baisong is now pulling with great ability
Lamian's ready... now, into the boiling water
After few minutes, drain the Lamian
add groundnut oil into a hot pan
add one egg
then onions, Shitake mushrooms and bacon
add the cooked Lamian and stir
it's time to add bean sprouts
carrots
dissolve some dry stock in soy sauce and add it
Here is our Lamian ready!
each ingredient has a specific function:
carrots and scallion for the color;
egg and pork for the taste
and this, my favorite ingredient, the Shiitake mushroom
which really makes the dish fly

Lamian: these are chinese noodles,
they were hand pulled just few minutes ago
In China we serve them with broth 0:06:33.000,0:06.37.000 but I made them dry, they are even better!

These are duck eggs
they are left to cure in a highly alkaline mixture of clay and ashes
and the result is a kind of natural-occurring cooking
the white turns jelly and the yolk becomes creamy
the taste is definitely odd:
it's a mix between earth and iron, with a strong taste of egg
