Hi, my name is Brandon Sarkis, on behalf of Expert Village. Today I'm going to show you
how to make a great holiday lamb rack with roasted new potatoes. So, here I am washing
my potatoes. You want to make sure you always wash your potatoes because if you don't, they
get just really kind of gross. They're grown in dirt. They come packed in dirt. There was
dirt in the bag when I dumped it out, so just be aware of that. All we do is wash them off.
I usually just sit here and kind of toss them in some fresh running water, then I'll dump
it out once and then I'll just give it another go. Let it fill up again. That's cold water, too, by the way. So there
we go with that. Now the one thing that is very important for this next step is you want
to make sure your potatoes are dry. You can't have a whole lot of water sitting on them
because then they won't really work with the oil. So, we're going to let these sit for
a moment and then we're going to go ahead and toss our potatoes.
