Hey guys Im Alejandra and Im Caroline and today we are making Twice baked Peanut Butter
Sweet potatoes. It sounds delicious. It is an awesome side dish, perfect for the season.
So lets start out with the filling. So a got a little bit of butter im gonna put that in
a sauce pan, just sover medium heat, just gonna melt this up, so basically what this
is the flavorings for the Sweet potato filling. Its so cool like the peanut butter sort of
takes this same place of sometimes a cheese filling, a different twist. So iv got a little
bit of salt and pepper, some heavy cream, little bit of smoked paprika, its my favorite
part and some cayenne. Whisk that up a little bit, just wanna get the butter melted. And
then we are going to add some peanut butter. For this Im using Mighty Maple cause I think
maple works so well with sweet potatoes. I think its a great for the fall you know. So
you wanna give me a nice big scoop of that in here.And so I just wanna get this all nice
and melted first and then we can mix it up with our sweet potato. That smells so good..The
paparika and the peanut butter, it comes together in this really cool flavor. All ready, so
I have some Sweet potatoes that I baked in the oven, just you know pop em in the oven
bake em until they are tender. Im just gonna set this aside for now and Im gonna work on
the Sweet potatoes. You wanna pick out something that's a little bit kind of small because
this is a side dish and you dont want a giant potato..I just pop these in the oven, bake
them until you can stick a fork in there and it comes out nice and easily. and then we
wanna cut the top part of, so almost like a little sweet potato hat. Just kind of right
of the top there. There you go. Looks simple enough.so then once you take it out, then
you can have this filling here, So we are gonna take the sweet potato out of the skin,and
Im gonna use a ricer, but if you dont have that you can just use a fork or you know however
you usually make mashed potatoes. Try to be gentle with this, because you don't want to
rip the sweet potato skins cause thats what we are gonna fill up with our delicious stuffing
later. This works pretty much about 1 per person. Are these things which you could prepare
in advance? You can totally do almost this entire recipe a couple of days in advance.So
its a great holiday side dish for entertaining, because you have most of the work done before
they get there. Just the skin, you wanna get everything else out.So Im gonna get this delicious
mix I made here and mix it with the sweet potatoes.Such a pretty color too. It matches
my dress.So we are mixing this up, combine all of it. So its almost like super yummy
peanut butter and mashed sweet potatoes at this point. Now we have our little empty potato
jackets, just fill it up with the stuffing, kind of wanna just let it pile up a little
bit high.You want it to come up a little bit above the edge.And iv got a baking pan here,
so you put a little spray to grease it up a little.How am I getting messier than you
in this situation. Planned it that way, I see.So once we get that all in there, this
is gonna go back in the oven for 15 minutes, just to heat it through. if you have a broiler,
you can even turn that on at the end to kind of give it a little bit of a turn on top.
So these just came out of the oven, its gorgeous. We got a little bit of color on top, its warm
and bubbly all the way through. Super delicious side dish. Im gonna show you how to garnish
it up now. So scoop this out, Nice,We do a little bit of cream fresh on top, you can
also do yogurt or sour cream.Some chives on top. Beautiful. Yeah, very festive too. So
lets try it out...Its really good, actually the maple along with the cayenne gives a nice
little kick. Little sweet, little spicy, its got a lot of great flavors. So there you have
