To make a citronella foam,
cut a citronella stick and crush it.
Let it infuse in 200g of skimmed milk.
Pass the preparation through a thin sieve and weight.
Add 1.5g of soybean lecithin.
Mix the preparation vigorously.
In a big bowl,
incorporate air at the top of the preparation.
Soybean lecithin is a molecule constituted of two parts:
one hydrophobic and the other one hydrophilic.
It will sit between water (the milk) and the incorporated gas bubbles.
This will stabilize the foam.
Once the foam is ready,
take some at the top
and serve it at the top of a cod fillet for example.
