Vegan Coconut Macaroons by The Sweetest Vega - Dessert A Day 2
Hey my Sweet Vs. Its The Sweetest Vegan here and today on the show, day two of the #dessertaday challenge,
We will be make coconut macaroons. I been really wanting to try macaroons, because the look so colorful and cute and decadent
and french, but I have been snooping around the internet and found these things called coconut macaroons
The look healthy enough and they also look like little puff clouds of delight, so lets give them a try. Here we go.
We are going to start off with a large mixing bowl, we are going to add in our dried coconut flakes
all purpose flour, cinnamon, and a pinch of salt.
Just a wee bit. Then use a wooden spoon to stir that all together
til it is well combined.
Then grab a second bowl to mix together your wt ingredients which are
coconut milk, agave nectar, and vanilla extract.
I am getting better at say EXtract instead of ash-tract as I was taught growing up.
Give that a good whisk together and add your wet ingredients to you dry ingredients.
And stir that around with a wooden spoon.
Then use a cookie scoop to scoop these perfect puff of heaven onto a parchment prepared cookie sheet.
And bake for about 18-20 minutes at 350 degrees F.
They will come out just toasted on the top, be sure not to overcook them.
I was expecting something crunchy, but what I got was something crisp on the outside and a puff of vanilla and cinnamon
