Hello and welcome to Todd's kitchen. In the past i have made a raw cookie dough recipe
i have also made a raw cookie dough ice cream recipe but boy do i have a surprise for you today
So join me today as i make my version of a
cookie dough cheesecake
So we are going to start of by making our base. So i have some chocolate cookies here
What i have done it run them through a food processor, now if you don't have a food processor just out them into a
zip lock bag and break them up with a rolling pin.
Just until you get a bread crumb type consistency
Next pour in our melted butter
Give it a good mix through until well combined
Next i have a spring form pan here
that i have lined with non stick baking paper. So with our
cookie and butter mixture, just place that in
and spread out
Next with the base of a cup we want to push it down
now just push down until it is nice and compacted
Next place this into a pre heated oven
at one hundred and sixty degrees celsius for six minutes
Next into a mixing bowl place in our softened cream cheese
and to soften it i have let it sit at room temperature for about thirty minutes. Next using a hand mixer
or a stand mixer we are going to mix this for a few minutes
just until it comes up nice and smooth
Now that the cream cheese has softened we are going to crack in one egg
the our half cup of sugar
then a teaspoon of vanilla
extract
Then mix through until well combined
Now we are going to start on our cookie dough topping. So into a mixing bowl pour in our
melted butter
then our sugar
then a teaspoon on vanilla extract
Then mix until well combined and the sugar has dissolved.
Once mixed add in our plain flour.
then mix through until combined
Now thats what we should be left with, a nice crumby mixture so to that add in our
chocolate chips
then give it a quick mix
Now i have our base here that has cool down since taken it out of the oven.
Next place our cream cheese mixture just on top
Then spread it out until even
once its nice and even grab your cookies mixture and pour it on top
and just
spread it out
just so its nice and even and just
lightly push it down, not to firm you don't want it to firm
with the base of a cup
Once done place it back in the oven for twenty five minutes
I have taken it out of the oven and had it cooling down for about twenty minutes
So as a final step i have some chocolate here
that i have melted in the microwave and placed it into a zip lock bag
next cut the tip of
just like so
and just make some lines
just along the top of the cheesecake
So the chocolate on top is optional but it does add a nice touch to the
top of the cheesecake. Now place this into the fridge for a good two hours to
completely completely cool down
I have taken it out of the fridge, but up a slice and its looking wonderful.
You have that chocolate cookies base, you have the cream cheese filling
and you have the wonderful cookie dough topping
topped of with some drizzled chocolate
and as you can see it was very easy to make
But lets see what it tastes like.
oh that is really good
that really really taste good
To have that cream cheese mixture mixed in with that cookie dough mixture
that sets it of it really really does
its like a match
made in heaven
it just works works trust me. This is one cheesecake
im proud to say tastes simply delicious
