Couscous is now part of the French culture.
French people rank this North African dish among their top favorites
This royal couscous is a festive dish that I love to make for friends and family.
Let yourself be transported by this colorful journey of scents and tastes
thanks to the vegetables, the spices and the meats.
I cut the beef brisket and the lamb neck into chunks
I put 3 tablespoons of olive oil in a pan heated over high heat,
I brown the pieces of beef for 2 minutes on both sides
I put them in a pressure cooker
Then I add: 2 liters of water
3 tbsp of ras-el-hanout
2 tbsp of coriander powder
1 tsp of turmeric powder
1 tsp of fennel powder
2 tbsp of paprika
2 tbsp of sweet pepper powder
1 tbsp of salt
I mix
I put the lid
I put the lower cooking pressure option,
and I cook on high heat for 30 minutes
Now I prepare the meatballs
I cut the beef loin into chunks
I also cut the lamb shoulder into chunks
I chop them with 10g of peeled garlic
I put them in a mixing bowl
Then I add: 1 tbsp of coriander powder
1 tablespoon of paprika powder
1 tablespoon sweet pepper powder
Some ground pepper
1 teaspoon of salt
1 tablespoon of olive oil
I mix all together
I cover it and I leave it in the fridge while I prepare the other ingredients
I cut the vegetables into large chunks:
The carrots
The turnips
The zucchinis
The peppers
The onions
The celery stalks
The Moroccan hot peppers are an option
The tomatoes
I crush 50g of garlic cloves
I peel them
I chop them roughly
All the vegetables are ready, now I make my meatballs
It is the turn of the lamb neck to also brown for 2 minutes on both sides over high heat,
in the pan already used for the beef
The cooking time of the beef is over,
In a classic pot, I put the neck lamb with the beef and the spices from the pressure pot
I add: the onions
The chopped garlic
The carrots
The tomatoes
I mix
I add one more liter of water
I put a lid, then I simmer on medium heat for 30 minutes
Meanwhile, I fry the meatballs always in the same pan for 6 minutes over medium heat
I turn them from time to time
I remove them
I prepare the couscous granules
In a pan heated over medium heat, I put 2 tablespoons of olive oil
the butter that I melt
I add the couscous granules
½ teaspoon of salt
I stir for 3 minutes
I cut off the fire, then I add 90cl of boiling water
I cover immediately and I let rest for 20 minutes
in the pot I add: the turnips
the celery
the Peppers
the optional Moroccan hot peppers
I mix and let simmer over medium heat for 20 minutes
The couscous granules rested for 20 minutes,
I stir them
I pour them in a bowl
Finally I add in the pot:
The zucchinis
The chickpeas
The meatballs
I put the lid back on and let simmer for the last 15 minutes still on medium heat
Now in a pan heated over medium heat I put 1 tablespoon of olive oil
I put the merguez and I let them brown
I turn them from time to time
I put the couscous granules in the microwave for 2 minutes
Then I stir a little bit
The royal couscous is ready!
Serve when everything is hot!
