How do you get that quintessential crispy skin and moist tender meat? We recommend a chicken weighing no more than 1.5Kg.
Add Salt and Pepper to the Chicken: inside the cavity and outside.
Add into an oven preheated to 210C for 20min. After 20min turn the temperature down to 180C and roast for another 40min.
After 60min in the oven, take the Chicken out and cover with foil and rest at room temperature for 20min. This allows the meat to reabsorb some of the liquid.
