Welcome back to Food News & Chews
and we're going to be talking football
food today but Super Party food but
I've got to tell ya we finished with that
interview with Jonathan we had to put
him in a cage.
Haha!
He's in a cage and I'm going to let him
out when you get one of these things done.
Haha well, he's going to like this
cause this is my stuffed chicken wings.
It's a great one for Super Bowl. You can
really kinda kick the normal chicken wings
up a little bit and do something fun but
I want to show you the technique on
how to stuff a chicken wing because
people are like "How do you do that, right?"
Yeah! It's got bones in it.
How do you put stuffing in it?
So, the first thing you want to do is
separate this drummy from the other
part from the two wing part. That'
really simple to do, just remove that;
just save it for later.
I guess you just get really good at that;
cutting bones.
This one is kind of interesting.
What you want to do is grab the wing
with a towel and hold this little wing tip
in and you want to crack that joint just
like this and then push. Do you notice
how the bones just pop right out like that?
And I usually leave one of them in there.
I'll just remove the smaller one and pull
this one out and next thing you know,
you've got this little drummy thing.
You do have to be a hunter/gatherer
don't you to do this operation?
We'll remove this little tip and this will be
great for soup but you see you've got
the little drummy or a little bit of a lollipop
and at that point you can kinda scoop the
meat down and it makes this little pouch;
so you've got a boneless little wing.
Now the other drummy part you can do
the same thing with but you just want to
run your knife around the base of the
wing or the end of the wing.
Not cut through the bone.
No, you won't be able to with a little knife
like this and you will want to scrape
everything down. See how I'm scraping
away the meat from the bone?
Mmmhmm. Is this Paleo nice?
Absolutely Paleo!
You know that is the rage.
The Paleo Diet.
Mmmhmm.
Hunter/Gatherer.
So you scrape the meat down the bone
all the way.
Got to be into bones crunching and stuff.
Then you kind of wrap that around as well.
You've got
You leave the skin on, right?
Mmmhmm a nice little lollipop there.
So now, to make the stuffing I like a
little bit of sausage in my chicken wings
and then a little bit of mushroom, any
kind you like is fine, blue cheese because
blue cheese and wings go great together, right?
Blue cheese in anything.
And then, fresh herbs is always good.
What kind of herbs are these?
I use some parsley and some thyme
and a little bit of rosemary tastes good.
So you mix up this stuffing into a
loose ball; use your hands a little bit.
And then check it out, take a little bit
of a piece, a little ball like that
Can't go wrong with that; sausage
and blue cheese.
and take your little drummy back out
and stuff it in there like this and then
wrap the meat back around and you've
got a stuffed chicken wing.
Oh nice!
Now, the best part about this is you
want to use these wings instead of like
the fried ones because I like to kind of
simmer them in beer. When you simmer
in a liquid like beer you actually boil
off a lot of the fat and it becomes a lot
less it becomes a lot healthier than
deep fried chicken wings. So anyway,
I'm going to use West Sixth IPA
You can use beer
a local beer and just kind of add that
to the pot then you will simmer the wings.
Yeah.
For about a half hour. You will see
when they are nice and cooked.
Then you can finish them on the grill.
Okay.
Now one thing I really like to do is take
ummm the beer after it has been boiled
down then add your hot sauce to that
and then mix that up.
Mmmm. Where did you get this?
This is just a nice this is called
Crystal's Hot Sauce. It's one of my
favorites.
Ohhh.
There are plenty that are made in
Kentucky and made locally too that you can also use.
You can find that in any place? Just hot sauce.
Whatever wing sauce you got just go for it.
So pour this into the beer then you can
kinda go and plate them up for the Bowl.
Okay, so. Should I let him out of his cage?
Might as well.
Let me go and get Jonathan out of his cage.
So, we've got stuffed chicken wings which we'll put on the plate.
