On behalf of Expert Village, I'm Laura Banford. I'm going to show you how to make some delicious
Island chicken. Now I'm going to slice up some scallions that is going to be one of
the final ingredients that go on top of the Island chicken platter. I love scallions obviously
one of the onion family here is some nice healthy specimen. Scallions are almost always
raw although sometimes you throw them in soup but more Chinese soup or Japanese soup. But
often they are eating raw. They have a great color a nice crunch special scallionly taste
different from other onions. Anyway just a little primer on how to slice or clean the
scallions. You want to take off the root ends (chop that off). We are not going to use all
the greens all the way. I'll slice them off cause there sort of in the way and then you
see there's a seam. There is a seam right there and take off the outer most layer and
discard it and you probably want to take off one more layer after that; it's white and
it's a little tough. Sometimes you get more scallions sometimes you get less scallions,
let's do that again. Get the seam peel that off see you have the outside then you have
this fiber almost translucent layer that comes off, that came off perfectly. Then you are
just going to if it's a big scallion like that I like to slice that again and you're
just going to basically almost mince it small dice. You go all the way up. We are going
to need more than that I'll continue doing that for a little bit. We are almost ready
to serve this Island chicken platter. Next we are going to talk about some really fun
ingredients that we are going to top this with.
