Hello and welcome to Todd's kitchen. A few months ago i made french macarons and i was not happy
with how they turned out at the end
But i have learn't alot since then so join me as i show you the proper way to make
french macaroons
To start of with i have a bowl with a sift on top
now into that place in
our almond meal
and our confectionery sugar
then sift through completely
just to get all the lumps out
once done you will have some large bits of almond meal left over
don't use them just throw them away as you don't want the larger bits in there
Then give it a good mix to combine
Next into a mixing bowl pour in three egg whites
that i have allowed to adjust to room temperature
You can do this with a hand mixer as well but im using a
stand mixer
So now beat these until
they start to fluff up. Once they start to fluff up slowly add in five table spoons of caster sugar or super fine sugar. Then continue to beat until it comes up glossy and soft peaks form.
Now that we have done our meringue and it is nice and glossy and thick
Then add in one tablespoon of vanilla extract
Then fold it through
next pour in half the sugar and almond meal mixture
just pour it straight in
then fold it through
once folded through add in the rest of the mix
Then once again fold it through
For extra colour while folding through the last batch
add a couple of drops
of red food colouring
couple more drops there by mistake but close enough
and fold that through
so once done
it should look like this when it is combined
Next on to a tray lined with non stick baking paper
using a piping bag
we are going to pipe
our macarons onto the baking paper
once their all on the tray, lift the tray
and band it down hard a few times
this will help
create the legs
once you have done that
let these sit here for about twenty minutes and in those twenty minutes you should get a slight
hard shell
form on the outside.
so when you touch it it won't stick to your fingers
Once they are ready we are going to place them into a pre heated oven at
a hundred and eighty degrees celsius for twenty five minutes
but half way through turn the whole tray around just so they cook evenly
I have taken these out of the oven and let them cool for a good half an hour
and look at that
look pretty fantastic
put together looks just like a macaron
So these are going to be nice and crunchy on the outside and soft in the middle
so now one final step
grab two of the equal size
and what I'm going to do now is with some white
chocolate that i have just melted in the microwave
and with that
just pull some right in the centre
and get the other one and squish it
Put that to the side to cool and continue until they are all done
I have just taken them out of the fridge to let the chocolate set
and they turned out pretty much perfect
much better then the first attempt
so im very very happy with these
very happy
Now to give one a try and see how they turned out
nice and crispy on the outside
and chewy in the middle
that turned out fantastic
That simply is delicious
