Hi there and welcome to Mind Over Munch two ingredient takeover where I make
delicious recipes out of just two simple ingredients. Today we are making my two
ingredient chocolate truffles. Computer ingredients. Computer Voice: Hello today you will need cream
cheese and chocolate. We're gonna start by melting up some chocolate. You can do this in the
microwave or use the double boiler method. Then in a large mixing bowl add in some
room temperature softened cream cheese. Today I am using Neufchâtel cheese to cut
back on some fat but you can use any cream cheese that you prepare. Pour your
melted chocolate into the cream cheese and mix well combine.
It should be nice, creamy, and thick. Spray down a large baking sheet lined with
parchment paper as well as a small cookie scoop. Mine is 2 teaspoons. Use your scoop
to get the perfect little truffle balls. Yum. Spoon them out onto the baking sheet.
Transfer to the refrigerator for three to four hours or until firm.
Once refrigerated you can dip the entire truffle in to additional
melted chocolate like a traditional truffle. But to lighten them up I simply
dust them with cocoa powder and add just a drizzle of chocolate on top. Yum.
Allow the chocolate to set in the fridge before devouring. Be sure to give this
