I prepared the mixture of the Victorian cake , click the link for the recipe and I divided
into 6 I'm going to color with food edible gel colours,
I'll use one for each dish. I used the purple , green, orange, yellow,
blue , and finally red. I put the mixture into a 20 cm tin and bake
for about 30 minutes and I will do the same for each cake .
When the cakes have cooled down completely you can level the cake so that all the layers
have the same height and are not domed on top .
I put the sugar syrup cover with the cheese cream like the one I used for strawberry cupcakes
obviously without the strawberries. Then I put the blue sponge , the green sponge
, the yellow sponge, the orange sponge and finally the red sponge.
To prevent the cake to become like the tower of Pisa I have put some cocktail sticks long
and I'm going to put it in the fridge for a few hours until set.
At this point cut the edges of the cake so that it is smooth and beautifully curvy .
I'm covering the cake with butter cream and the remaining cheese cream that I have mixed
together as I think it tastes better or at least we like it more and
again I'm going to put back in the fridge for a few hours.
This time I going to remove the cocktail sticks as it will not move anymore and I cover the
top of the cake with white sugar paste . I'm going to cut a strip of red sugar paste
in this way and with the tip of a brush I press the middle of the strip in this way,
so that I will have a kind of ruffle or frill. I'm going to put the ruffle starting from
the top of the cake, while putting on the cake I will have to give more waves .
For each color I'm going to make two strips of frills.
Now that I've put all the frills I'll just have to let you see the inside of the cake.
