Hey guys, it’s Ro!
Welcome to another Nerdy Nummies!
I got so many requests from you guys to make something else Harry Potter related.
And, it’s cold outside, I’ve been drinking a lot of hot apple cider, so I thought,
let’s combine these ideas and let’s make Golden Snitch Caramel Apple Cider!
Let’s get started!
The things you will need, will be: 3 cups of regular flour, 1/2 a teaspoon of
almond extract, 1 teaspoon of vanilla extract, 1 egg, 2 teaspoons of baking powder,
1 cup of butter, which is 2 sticks, and 1 cup of regular sugar. You’ll also
need 1/4 cup of light brown sugar and some salted caramel toppings,
om yum, yum, yum, yum, yum, yum!
8 cups of spiced cider, I just bought a big jug at the store.
And, some whipped cream, 2 mixing bowls, a little hand mixer, a cookie sheet
with a piece of parchment paper. A whisk, a tear shaped cookie cutter,
2 gold cups, I’ll put some links down below to different sites where you can find
gold cups, and if you can’t find gold you can use yellow, or anything that will
look like the golden snitch. white cookie icing, and now let’s put it all together!
The first thing that we’re gonna do is make our side of the cup wing cookies.
I’m using a really yummy recipe, it’s a vanilla almond sugar cookie recipe.
Om mum, mum, mum, mum! And, the first thing that we’re gonna do is in this mixing
bowl we’re gonna sift together our flour and baking powder.
Next in the second bowl we are gonna cream together our butter and sugar.
So put all the butter in, make sure it’s room temperature, and put all your sugar in.
Then you’re gonna beat it till its light and fluffy. Now add both of your
extracts, vanilla and almond, and your 1 egg. Then we’re gonna mix again until
everything is smooth and combined.
Now you’re gonna slowly add in your flour and then mix. I like to add it in thirds.
Once your dough is mixed up you’re gonna take a little bit of flour, sprinkle it
over a flat surface, so that it won’t stick. Plop it down, you’re gonna flatten
it out. Take a rolling pin, sprinkle a little flour on top, and then roll it out.
Now to make the wings you’re gonna take your tear shaped cookie cutter, and,
we’re gonna cut ‘em out, a whole bunch of ‘em. and remember you’re gonna need
2 for every cup. And then remove the excess dough, set it off to the side so we
can make some more. And then, we’re gonna take this little jobber, I found it
at the craft store Michaels, it’s got these different cutting patterns and
I picked one that was really jagged, it just went up, down, up, down, up, down
up, down to look like the bottom of the wing, like little feathers.
So what you’re gonna do is at the corner, you’re gonna line it up, and
you’re gonna cut all the way across. Then you’re gonna move them over
to your baking sheet.
Once you’ve got your cookie wings all cut out, we are gonna take this cutting
knife and we’re gonna cut angled notches into the side so it’ll sit on the
side of your cookie.
Maybe I’ll have a little snaeck.
Once you’ve got all the notches cut out, we are gonna put these
cookies in the freezer for 10 minutes to chill. This will help them keep their
shape while they’re baking. And, we’re gonna heat our ovens to 350 and bake
for 10 minutes. After your cookies are done baking, give them plenty of
time to cool, and then, we are going to decorate. I’ve got some vanilla
cookie icing, and I just put it in a little plastic baggie and then put a
number 2 tip at the end for a little bit more control. And now we’re gonna ice
the top of our cookies. The first thing that we’re gonna do is draw an outline
all the way around the wing, and then fill it in. You can also use a toothpick
to shape the icing for detail. I let the cookie icing set for about 10 minutes
to harden, and now I’ve switched the tip. I put a number 1 tip, so it’s a
little bit smaller, and now I’m just gonna draw little lines so it looks a little
bit more like the Golden Snitch wings.
Now that we’re done decorating our cookies, we are gonna make our
Caramel Apple Cider!
The first thing that you’re gonna do is in a medium sized saucepan we are gonna
add 8 cups of spiced cider. Then we’re gonna add 1/4 cup of our light brown sugar,
and a 1/4 cup of our salted caramel topping. Now we’re gonna take our pot
over to the stove, we’re gonna turn it on medium heat and we’re gonna stir
frequently until everything is dissolved and it starts to simmer.
And then it’s ready to serve!
Now we’re gonna put everything together, I’ve got 2 cups out, but if you have a
bunch of friends coming over just use as many as you’d like.
Oh this smells so good! Alright, using a ladle, I’m just gonna carefully pour our
hot caramel apple cider into this little cup. Now you put a little whipped cream on top.
Ooooooohh!
And, I put a little bit of the salted caramel topping into a little squeezy bottle.
This is optional, you don’t have to do this, I just love caramel.
Oh my gosh! Look how cute that is!
And now, you’re just gonna take your winged cookies, and we’re gonna put 'em on each
side and then I'll flip it around so you can see it.
Aaaaah! And now you can make as many as you’d like.
Ta-da!
